How Can I Stop My Hair From Poofing While Air Drying?

When my hair air dries it ends up looking like a big puff ball on my head. This also happens in humidity.

I don't want my hair to feel crispy (when I use mousse) but I want my waves to not poof up. When they do I'm forced to pull my hair into a ponytail, something I'm really sick of doing.

Any tips?
