How Can I Get My Curly Hair to Look Professional>

My hair has a life of its own. Some days it is curly (about 1 inch curls). Other days it is flat, with just enough wave to make it look messy and uncombed. When it's humid it's like I have the white chick afro of doom.

I currently use a type of leave in conditioner, but it does nothing to define the curls. Also my hair is rather dry on the ends and greasy at the scalp. I can't skip a day of washing if I want it clean and grease free.

Any advice for making it professional for an office setting (accountant) is greatly appreciated.
